Watermelon Cocktail Recipes

As part of my mixology course, we were given an assignment to create our own cocktails. I did have some inspiration from the internet, but here they are!
Both summer cocktails “The Watermelon Boy” and the “Late Fo’ Dinner” are variations of one another with a few changes to the mixers. They stem from a long history of the favorite summer fruit that is enjoyed by many as a snack or paired with their favorite summer barbecues. Like full watermelons, these are to be ordered as full pitchers and shared among the group.
For the classic experience and the best-looking, consider The Watermelon Boy. When fully presented, the drink will look like an upside-down watermelon slice. The bright colors in this drink are sure to catch the eye and create a delicious and mouth-watering experience. The sweetness of the watermelon matched with the lime juice create a balanced cocktail that is sure to please anyone.
The variation of The Watermelon Boy, Late Fo’ Dinner, is aptly named. This drink is for those looking to savor their summer treats and who don’t plan on going anywhere anytime soon. Delicious and dangerous, the bright red hue of the pure watermelon along with the citrus flavors of the triple sec and smoothness of the coconut rum create the perfect team of summer afternoon delight.

The Watermelon Boy
Ingredients:
4 cups watermelon - cubed
Juice from 3 limes
1 cup vodka
(normal or watermelon flavored)
Ice
3 oz. Midori (for individual layering)
Directions:
In a blender, puree the watermelon until it reaches smooth, “juicy” texture.
(Optional): strain the watermelon puree to remove pulp and seeds.
Add the watermelon juice, lime juice, and vodka into a large pitcher. Add ice and stir.
For individual serving: Pour the watermelon mixture about 2/3 full in a highball glass. Add approx. 3 oz. Midori to layer on the mixture using a bar spoon. Garnish with lime wheel and/or watermelon slice. Serve immediately.
Late Fo’ Dinner
Ingredients:
4 cups watermelon – cubed
1 cup vodka (normal or watermelon flavored)
Ice
½ cup Triple Sec
½ cup Coconut Rum
Juice from 3 limes
Directions:
In a blender, puree the watermelon until it reaches smooth, “juicy” texture.
(Optional): strain the watermelon puree to remove pulp and seeds.
Add the watermelon juice, lime juice, triple sec, coconut rum, and vodka into a large pitcher. Add ice and Stir.
Pour in a highball glass. Garnish with watermelon slice and/or lime wheel. Serve immediately.
